Chilled Sangria Bites

This refreshing dessert is perfect for springtime gatherings! You can make it in advance and serve with a glass of our new release chilled red wine, Rojo Fresco
Ingredients
- Mixed fruit: Raspberries, blueberries, pomegranate seeds and kumquat (optional)
- 2 cups of Rojo Fresco wine
- ½ cup sugar
- 5 tsp unflavored gelatin
- Juice of one orange (3 Tbsp)
Instructions
- Cut the raspberries and blueberries into halves or quarters.
- Cut the kumquat into thin slices (remove any seeds and white pith)
- Arrange the fruit in a lightly greased silicon ice cube tray or silicon mini muffin tins.
- Sprinkle the gelatin over ¼ cup Rojo Fresco in a small bowl and let stand 1 minute to soften.
- Bring 1 cup of Rojo Fresco to boil with sugar, stirring until sugar is dissolved. Remove from heat and slowly whisk into the gelatin mixture. Continue to whisk in the remaining ¾ cup Rojo Fresco and the orange juice.
- Transfer your bowl into a larger bowl of ice and cold water. Cool mixture for about 5 minutes.
- Slowly pour mixture over fruit, then chill, covered, until firm, at least 6 hours.
- To unmold, pop out each cube and serve in individual spoons or on a chilled tray. Keep chilled in the fridge until ready to serve.
- Enjoy along with a chilled glass of Rojo Fresco!
Notes
Note: To help unmold the trays, try putting them in a Pyrex pan of hot water for 3 seconds until loose. If it melts too much, just put it back in the fridge!

I used silicon ice cube trays. Don’t pack in too much fruit because you need room for the wine flavored gelatin for it to set right.

You can serve on individual spoons for an elegant touch!
