Classic French Cheese and Wine Pairing

Cheese and Wine are match made in heaven! Why open one bottle when you can open three? Invite some friends and try these fun and elegantly simple cheese pairings. I’ve paired three French cheeses with three of our Tizona by Bokisch French Wines: Old Vine Carignane, La Colada Bordeaux Blend and Petit Verdot. Enjoy!
Ingredients
  • French or Swiss Gruyère
  • Smoked Gouda
  • French Brie
  • Roasted Cashews
  • Terrapin Ridge Hot Pepper Bacon Jam
  • Fresh Thyme Sprigs
  • Abuelita’s Mexican Hot Chocolate Tablets
  • Blackberry Jam
Instructions
  1. Slice the Gruyère into sticks. Place in a crisscross pattern on the left side of the plate with a few cashews.
  2. Cut the Smoked Gouda into triangles. Set in the middle of the plate with a teaspoon of hot pepper bacon jam on top. Garnish with a small piece of fresh thyme.
  3. Use a mortar and pestle to grind one tablet of Abuelita’s Mexican Chocolate so it becomes fine and powdery. (You can also use a coffee grinder or cuisinart).
  4. Cut the Brie into small triangles. Cut off the rind from the top and bottom. Use a knife to spread a light film of blackberry jam on one side of the brie. Then coat that same side with the chocolate powder. Place the Brie on the right side of the plate.
  5. Serve with three individual glasses of Carignane, La Colada Blend and Petit Verdot
Notes
To stage your wine and cheese pairing, use individual slate or ceramic rectangular plates. Place the cheese in the same order as the wine tasting. First the Gruyere and Carignane, second the Gouda and La Colada Blend and third the Brie and Petit Verdot.
