Crispy Goat Cheese Prosciutto Wraps

Looking for a new appetizer to serve at your next bookclub? This can be made in advance and left in the pan to reheat right after the guests arrive. Select seasonal stone fruit to wrap in the prosciutto with goat cheese and roasted pistachios. Drizzle with balsamic glaze or honey and serve with Bokisch Spanish reds such as Tempranillo or Garnacha.
Ingredients
  • Seasonal Stone Fruit (Plum, Nectarine, Apricot)
  • Herb Goat Cheese
  • Prosciutto Slices
  • Pistachios
  • Balsamic Glaze or Honey
Instructions
  1. Lay out a slice of prosciutto.
  2. Put a spoonful of herbed goat cheese on one end.
  3. Sprinkle with chopped pistachios.
  4. Place a wedge of fresh fruit next to the goat cheese.
  5. Roll up the prosciutto with the goat cheese and fruit wedge inside.
  6. Sauté in olive oil on medium heat.
  7. Serve with extra fruit slices on the side and a zig zag drizzle of balsamic glaze or honey.
Notes
Make in advance but leave in the frying plan to reheat right before serving.

I used fresh Santa Rosa Plums from our garden for this recipe.

Lay out each piece of Prosciutto (or Jamon Serrano) with a spoonful of goat cheese, roasted pistachios for crunch and your selection of fruit.

After you roll them up and fry in olive oil, serve with a delicious fruity Bokisch red wine. I paired this with our new MAS Prieto Picudo. I think the Garnacha would be a perfect match and who can go wrong with our flagship Tempranillo!
