Spicy Summer Steak Salad

This is one of my favorite summer salads. I love the smokey spiciness of the chipotle dressing combined with the chili-lime rub. Slice the steak crosswise and arrange on the greens with the corn salad on top and a drizzle of the dressing on top. This pairs perfectly with our Family Estate Graciano.
Ingredients
- Ingredients for the Steak Rub:
- 2 Tbsp fresh lime juice
- 1 Tbsp ground cumin
- 1 Tbsp ancho chili powder
- 1 Tbsp olive oil
- 3 pressed garlic cloves
- Salt and pepper
- Ingredients for the Salad:
- 2 ears fresh corn, blanched 2 minutes
- 4 tomatoes, chopped
- 1 cup chopped jicama
- ½ cup chopped red onion
- ¼ cup chopped cilantro
- 1 sliced avocado (wait to add until serving)
- 1 bunch of arugula (plate before serving)
- Ingredients for the Dressing:
- ¼ cup fresh lime juice
- 2 pressed garlic cloves
- 2 chopped chipotle peppers in adobo sauce (remove seeds)
- 1 Tbsp adobo sauce from the chipotle peppers
- 1 tsp white wine vinegar
- ¾ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Steak Rub: Combine ingredients and rub onto the steak, let marinate for 2 hours
- Corn Salad: Mix all ingredients except avocado and arugula, cover and chill
- Chipotle Dressing: Wisk together and add half to the salad before serving, save some extra to pass around
