Stuffed Grilled Figs

Ingredients
- Fresh Figs
- Herb Goat Cheese (try with blue cheese)
- Pancetta Slices (substitute bacon or prosciutto)
- Pistachios or roasted walnuts
Instructions
- Cut off the stem of the fig and cris cross slice the top.
- Put a spoonful of herbed goat cheese inside
- Wrap the bottom of the fig with pancetta.
- Grill on low heat until the goat cheese bubbles and the prosciutto is crispy.
- Top with chopped pistachios or walnuts.
Notes
If you are a bacon lover, switch to maple smoked bacon instead of pancetta. Also prosciutto works well as a substitute.

We have a beautiful fig tree in our backyard. If you don’t have one, contact me for figs!

Grill quickly on medium to high heat so the pancetta or prosciutto gets crispy. Serve immediately!

If you are lucky enough to have a fig tree, serve along with a few fresh leaves on your platter as an accent of color.
