Butternut Squash Tapa

This is a stunning and tasty tapa that can be prepared in advance and enjoyed at room temperature. The orange, green and ruby red colors are perfect for the holidays! I like to use traditional Sweet Italian sausage that has a little bit of fennel. Serve with our Old Vine Carignane or Bechtold Cinsaut.
Ingredients
  • 1 package pre-cut butternut squash
  • 2-4 sweet Italian Sausage
  • Parsley
  • Pomegranate seeds
  • Toothpicks
Instructions
  1. Toss the butternut squash in olive oil and roast in the oven or air fryer until slightly browned.
  2. Cook the sausage in a frying pan until cooked through. Let cool and cut into ¼ slices.
  3. Assemble the tapa by starting with a couple pieces of squash, a leaf of parsley and a couple slices of sausage.
  4. Arrange on a platter and sprinkle with pomegranate seeds.
