Recipe: Toni’s Carquinyolis

Summary: Carquinolis are what Catalans call a cookie that you may know as biscotti.

Ingredients

  • For batter:
  • 1 cup + 3 tbsp (150 g) flour
  • 1/2 cup (100 g) sugar
  • 1 egg
  • 1/2 lemon peel grated
  • 1 tsp baking powder
  • approximately 1 cup (100 g) of whole raw almonds, unpeeled

    For egg wash:

  • 1 egg yolk mixed with a little water

Instructions

  1. Mix all ingredients for batter except almonds.
  2. Add the almonds and make two loaves of about 2 inches wide (sprinkle counter with a flour to avoid sticking)
  3. Place in a baking tray on parchment paper and brush with egg wash.
  4. Bake in a preheated oven at 350 deg F (180 deg Celsius) about 25 min.
  5. Take the loaves out of the oven and let cool.
  6. Cut loaf into cookies with diagonal cuts of 1/2 inch thick.

    These cookies are great to serve with a glass of Garnacha for a chat by the fireside.

  7. Put the cookies back on the parchment paper and bake for 5 to 10 minutes at 320 deg F (160 deg Celsius) until they have a lightly browned coloring.
  8. Once completely cooled, store in an airtight container (so they do not go soft)
