This recipe takes just a few minutes. Be careful not to not overcook! You don’t need to reduce the wine. You want your chorizo to soak in the wine but not overcook to get leathery.  This is delicious served on a slice of bread with Smoked Cheese Mousse.

Chorizo Simmered in Tempranillo

Palacios Brand Spanish Chorizo (Mild) Bokisch Tempranillo 2 Garlic Cloves 4 Sprigs of Fresh Herbs (winter savory or thyme)
Ingredients
  • Palacios Brand Spanish Chorizo (Mild)
  • Bokisch Tempranillo
  • 2 Garlic Cloves
  • 4 Sprigs of Fresh Herbs (winter savory or thyme)
Instructions
  1. Slice Chorizo (about ¼ inch thick slices)
  2. Place into a wide pan with ½ cup of Tempranillo or enough to cover the chorizo
  3. Smash the two garlic cloves and add along with the fresh herbs.
  4. Bring to boil and reduce to simmer for 15-20 minutes.
  5. Serve in a ceramic bowl with toothpicks and crusty bread.
