Recipe: Halibut in Albariño Seawater

Ingredients

  • 1 Pound Fresh Halibut (cut into 1 inch cubes)
  • 3 Shallots (sliced)
  • 2 Garlic Cloves (sliced thin)
  • 2 Calabrian Chiles (sliced thin)-can substitute other hot chile of your choice
  • ½ Fennel Bulb (sliced thin)
  • 3 Tbsp tomato paste
  • 1 cup Albariño
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ cup seawater (or salted tap water)
  • ¼ cup chopped parsley
  • 1 Tbsp chopped oregano
  • ¼ cup Extra Virgin Olive Oil

Instructions

  1. Heat Olive Oil in skillet.
  2. Add shallots, fennel, chiles and garlic. Sauté 4 minutes until soft and lightly caramelized.
  3. Add tomato paste, cumin and coriander, sauté 1 minute, add the Albarino and cook for 2 minutes.
  4. Add the seawater and simmer on low for 6 minutes.
  5. Add the halibut and cook for 2 minutes until cooked through.
  6. Add parsley and oregano.
  7. Serve in shallow bowls with a drizzle of extra virgin olive oil.
