When I was a kid we lived out in the country and my mom often had to get creative with what was in the pantry. One day she made us tuna tacos! I have to admit, we were skeptical at first, but one bite and we demanded more! It’s a perfect recipe for pantry diving. You’ll be surprised how good it is! Trust me on this!

Gramma's Tuna Tacos

Ingredients
  • one can tuna (whole chunk,drained)
  • 2 stalks celery (chopped)
  • 2-3 Tbsp mayonnaise
  • 1-2 tsps cumin (optional)
  • Corn tortillas
  • Vegetable oil
  • 6 Romaine lettuce leaves
  • 1 tomato (sliced)
  • 1 lemon (cut into slices)
Instructions
  1. Make your tuna according to your taste. Drain the tuna, mix with mayonnaise, chopped celery and cumin.
  2. Fry the corn tortillas in vegetable, form into a taco shell, let drain on paper towels.
  3. Stuff the corn tortillas with the tuna, add sliced tomatoes and a lettuce leaf.
  4. Serve with a lemon slice to squeeze on top.
Notes
This is a pantry friendly recipe and a nice change from the classic tuna sandwich!
