Smoked Gouda Mousse

6 oz Spanish San Simon cheese (or substitute a smoky cheese) ½ cup heavy cream ¾ tsp unflavored gelatin White Pepper
Ingredients
  • 6 oz Smoked Gouda or Spanish San Simon cheese
  • ½ cup heavy cream
  • ¾ tsp unflavored gelatin
  • White Pepper
Instructions
  1. Cut the cheese into cubes.
  2. Combine Cheese and cream and simmer until cheese is slightly melted.
  3. Meanwhile, soften the gelatin in 1 ½ Tbsp of water.
  4. Stir in the gelatin and transfer to a blender.
  5. Puree until fairly smooth.
  6. Season with white pepper.
  7. Scrape into a shallow bowl and refrigerate until set. Approx 30 min.
  8. To serve, bring the mousse to room temperature, whisk by hand until fluffy.
Notes
This mousse can also be frozen so you can make it in advance for a party!
Serving ideas:

Place a dollop of mousse on a Chinese soup spoon and top with a sundried tomato or crisp piece of prosciutto for an easy tapa!

Serve on a slice of French Bread with a slice of chorizo simmered in red wine and garnish with minced chives.

Serve as a salad along with sliced tomatoes, red onion and kalamata olives, garnish with herbs and drizzle with extra virgin olive oil.
